Sausage and kale pasta

Amazing recipe to serve over pasta! 

2 lbs - Pork Sausage
1 yellow onion
1 red pepper
1/2 tsp ginger
2 cloves garlic
1/2 tsp fennel
1/2 tsp Sage
1 tsp Oregano
1 tsp Basil
Pinch chipoltle chili powder
1 Beer
1 can diced tomatoes
1/4 cup of flour
1 bag (12 oz) of frozen kale
1 cup sharp cheddar cheese
1/2 cup sour cream
1 box of pasta of your choice, cooked
Salt & pepper to your liking

Saute the onions. Add pepper, garlic and ginger and saute until soft. Brown sausage, then add all spices, beer, kale and tomatoes. Saute over low heat while liquids evaporate. Sprinkle flour over mixture and toss to coat. Cook mixing frequently to prevent burning until liquids have absorbed into mix. Before serving stir in cheese and sour cream, season to taste and serve over pasta.
